I just cut it in half, roast it in the oven or nuke it in the microwave, let it cool, scoop out the flesh and put it in ziploc freezer bags. I'll even measure it as I package it so I know how much is in each bag. In your case, you can freeze it in doggie size increments and just take out a bag a day, as needed.
